Most venues do not clear event waste as part of their standard hire fee. Work out who is responsible before the day, not after the bins are overflowing.
Some venues include basic waste collection in their hire fee, others charge extra, and some expect the organiser to arrange it entirely. Ask specifically about waste removal when you book the space - do not assume it is covered.
Catering waste (food scraps, packaging, disposables), general litter from guests, and any packaging from deliveries or decor all need somewhere to go. A wedding or corporate event for 100+ guests generates more rubbish than most venues' standard bins can hold overnight.
A 70-litre bin per 30-40 guests is a reasonable starting point for a day event, more if food is being served continuously rather than at set meal times. Position bins near catering stations and exits so staff and guests both have somewhere convenient to put rubbish.
Hiring the bin does not include emptying it - agree with your venue or caterer who takes rubbish out during the event and who does the final clear-out afterwards. This is the detail that gets missed most often, and the one that causes disputes over deposits.
