Induction hobs are the safest and most controlled option for indoor catering in marquees, dry-hire venues and spaces without mains gas. They heat quickly, maintain precise temperatures and produce no open flame. A single induction hob suits sauces, soups and general pan work for up to around 80 to 100 covers depending on menu complexity.
Commercial gas ranges with two, four or six burners suit larger-scale cooking operations where multiple dishes need simultaneous heat. Gas ranges work best in outdoor settings or in properly ventilated kitchen spaces. They are the standard choice for outdoor wedding caterers and festival food operations running on bottled gas.
Twin-basket fryers handle chips, fried snacks and coated items at volume. A standard commercial twin-basket fryer produces around 12 to 15kg of chips per hour. Flat-top griddles cook burgers, sausages, bacon and flatbreads in quantity and are a staple for outdoor catering and street food operations.
Convection ovens circulate hot air for even cooking across multiple trays. They suit pastry, roasted items and batch cooking and are often used alongside hobs and warming equipment in a complete temporary kitchen setup.
Weddings at dry-hire venues or marquees require a complete temporary kitchen. The equipment needed depends on the menu and cover count, but a typical setup for 100 guests involves two to four induction hobs, a hot cupboard for holding, and bain maries for sauces. Caterers working on bottled gas use gas ranges in place of induction.
Outdoor festivals and temporary kitchen setups use gas cooking equipment when mains supplies are limited. A gas range or flat-top griddle running off bottled gas covers most outdoor food service needs. Gas cooking equipment requires adequate outdoor ventilation and must not be used in fully enclosed spaces without proper extraction.
