Order one fitted cloth per table. Unlike draped linen, fitted covers are size-specific, so table dimensions matter. A standard 6ft trestle table needs a fitted cloth made for that size. If the cloth is too small, the ends show. If it is too large, the fit looks loose and the benefit disappears. Check the table list before you confirm your linen quantities, especially if part of the event uses furniture from another supplier.
If tables are going into more than one room or being dressed in stages, add a small spare margin. That gives your setup team breathing room if one cover gets marked or a late table appears in the floorplan.
