For a burger and hot dog buffet, you probably do not need one. For a three-course dinner service for 150 guests, you almost certainly do.

Capacity and output

A commercial salamander grill produces intense top-down heat at around 350°C. It handles finishing, glazing, and browning tasks faster than an oven — a gratin top or a glazed dessert takes 60 to 90 seconds under the salamander versus 8 to 10 minutes in an oven. For high-volume service, one salamander supports a pass of 100 to 150 covers per service.

Power requirements

Commercial salamanders are electric and draw between 2.5kW and 4kW depending on the model. Confirm the power supply at the temporary kitchen or event site before booking. Extension leads must be rated for the appliance wattage. For outdoor events using generators, confirm the generator output with your power supplier.
