The minimum hire list

For a 100-person seated wedding breakfast, the minimum hire list is: 100 chairs, 10 to 12 dining tables, 10 to 12 tablecloths, 100 napkins, 100 place settings of cutlery, 100 dinner plates, 100 side plates, 150 wine glasses, 120 champagne flutes. That covers the room. Everything else — poseur tables for the reception, linen for the top table, bar equipment — adds to that base.

Where first-time hirers go wrong

Under-ordering glassware is the most common mistake. Guests pick up glasses, put them down, lose track. Order 1.5 glasses per guest as a minimum for wine service.
